Rachelle's Pickled Dilly Beans Recipe (from August 8th dinner)

Stuff in two glass quart jars: 1 lb string beans (pinch off the stems) 1 jalapeño pepper (sliced thin) 1 whole dill plant ( flower and greens) 4 garlic cloves In a pot, simmer for 5 mins: 2 cups cider vinegar 1 cup rice vinegar 1 1/2 tbsp sea salt 1 tsp whole pepper corns 1 tbsp whole coriander 1 tsp caraway 1 tsp dill seed 1 tbsp honey   Pour hot vinegar and spices over string beans and fresh herbs. Add boiling water to top off the jars before capping. Cap immediately. Leave out overnight, and then refrigerate. Enjoy :)
